Copycat Recipe: Panera's Broccoli Cheddar Soup Recipe

I've had a bunch of you ask for this recipe after seeing my Instagram post on it, what doll-faces you are!
My husband loved this recipe, and it is a super solid soup to add to your recipe books.
I found the recipe via pinterest.

I've never cooked anything else from this girl's blog 
but this recipe was great  and I loved her explanation for the dish.
A few notes I will add is to:
1. Follow the directions when she says cut the onions as SMALL as you can, you
don't want big ol' hunks of onions in your soup
2. Monitor how much Gouda cheese you add, I found the cup she recommended was too much
so I ended up having to add in more cream to calm it down (too much cheese makes it "gluey"), but 
that was an easy fix, so just monitor your cheese from the get go by adding small portions
 til it is just right and you will be fine. 
3. I think it was the nutmeg that I wasn't super wild about, BUT it wasn't a deal breaker or anything
I would say leave out the nutmeg and maybe add the same amount of dried mustard for a little more zing.
